I love using spaghetti squash instead of noodles for lots of dishes! Tastes really good, super easy to cook and saves carbs!
Here we did chicken, tomato, asparagus, mushrooms and some pesto but you can really do anything with it! I cook it in the oven at 400 degrees halved with a little olive oil and salt untill it looks like the skin will pull away easily! I like to then cook it in the pan with everything else because I like it overcooked! Give it a try and play around with it!
